「柳屋」は長門湯本温泉街にある瓦そばの専門店。
ロケーション・雰囲気 築70年以上の古民家をリノベーションした「だいご長屋（長屋）」の1階。土壁と木柱、古き良き建物の風合いを残しつつ、現代的に整えられていて、レトロで落ち着いた空間。
メニュー・料理 ・瓦そばが看板。熱した瓦の上で茶そばがジュージューいう演出があり、香ばしさと音で五感を刺激する。 具材にもこだわりあり：錦糸卵、長門ネギなど地元の食材を使っている。 セットメニューがある（しらす飯セット、わかめむすびセットなど）、テイクアウトメニューも充実（みたらし団子など）で、そぞろ歩きと組み合わせやすい。
体験／演出 瓦そばが運ばれてきたときの「ジュージュー」という音、香ばしい香り、瓦の熱さの演出。見た目・音・香りすべてで“期待が高まる”体験を提供してくれる。

長門湯本温泉の魅力
歴史と泉質 約600年の歴史があり、山口県最古の温泉のひとつ。応永34年（1427年）に発見されたと伝わっている。泉質はアルカリ性単純温泉で、無色透明。肌に優しく、湯あたりもしにくいとのこと。
温泉街のリノベーション／まちづくり 近年、古い施設の再活性化が進んでいて、立ち寄り湯「恩湯（おんとう）」の新装建築や施設の改修、川床テラス・飛び石など外の散策を楽しめる空間の整備などがされている。 また、「オソト天国」（外で過ごす楽しみを増やす）というコンセプトで、ベンチや川沿いのスペース、スイーツやカフェ、物販など、散策・滞在中のアクティビティが増えている。
自然と風景の魅力 音信川（おとずれがわ）沿いの風景が美しい。川沿いを歩いたり、川床テラスで川のせせらぎを感じたりできる。四季折々の景観も良く、桜・新緑・蛍・紅葉などの自然が楽しめる。
