Welcome to our new adventure in Tsunan, Niigata Prefecture, where breathtaking landscapes and rich food culture await.
This time, an AirJapan cabin attendant teams up with Mr. Makoto Shimizu, the Executive Chef of ANA Catering Service, on a quest to discover and cook with local ingredients. Their journey begins with a visit to Tsunan Local Farmers’ Market and Tsunan Tourism and Products Center, where they find beautiful, thick asparagus — a local specialty.
They then visit an asparagus farm to learn how it’s grown and harvested in Tsunan’s unique natural environment, nurtured by snowmelt water and fresh mountain air.
Inspired by this experience, Chef Shimizu creates original dishes using the asparagus — including even the parts usually discarded — highlighting both flavor and sustainability. These dishes are then shared with the people of Tsunan for a heartwarming tasting session.
