The Asian softshell turtle, or Suppon, is considered a luxurious delicacy in China and Japan. Rich in collagen and nutrients, it is usually prepared into a soup and eaten to increase one’s energy and health. To prepare the turtle, its blood is drawn and mixed with sake to be consumed as a drink. The turtle is then processed and stewed with local ingredients.
Processing a softshell turtle requires a master chef as the turtle packs a powerful bite and can inflict serious injury. As an effort to prevent overconsumption, the Asian soft shelled turtle is now the most commonly farmed species in China’s turtle farms.
