Today, in the crisp and chilly air of winter, I have come to the birthplace of Japan\u2019s world-renowned whisky: the Suntory Yamazaki Distillery. This is a live recording from January 22, 2026, capturing the vibrant yet serene atmosphere of this historic site.<br \/>\n\u25a0 The &#8220;Boundary&#8221; and History of Yamazaki<br \/>\nAs I mention at the start of the video, many people assume the Yamazaki Distillery is in Kyoto, but it is actually located in Shimamoto Town, Osaka Prefecture. While the adjacent Oyamazaki area is in Kyoto, this distillery sits right on the border. Construction began in 1923 by Shinjiro Torii, the founder of Suntory, who chose this specific location for one primary reason: the exceptional quality of the &#8220;water.&#8221;<br \/>\n\u25a0 Blessed Water and the Perfect Climate<br \/>\nYamazaki has long been famous for its pure water, even mentioned in ancient Japanese poetry. Situated where the Katsura, Uji, and Kizu Rivers meet, the area is prone to misty, humid conditions\u2014ideal for the aging process of whisky. Despite the light snow and biting cold during this visit, I share the story of the &#8220;Water of Life&#8221; born from this rich natural environment.<br \/>\n\u25a0 Symbols of the Distillery: Pot Stills and the &#8220;Yatte Minahare&#8221; Spirit<br \/>\nNear the entrance stands a model of the massive pot stills, the heart of the distillation process that transforms malt into liquid gold. This site embodies the spirit of &#8220;Yatte Minahare&#8221; (Go for it!)\u2014the famous motto of founder Shinjiro Torii.<br \/>\nIn the exhibition area, I also introduce Suntory&#8217;s global portfolio, including Jim Beam and the Scottish Islay whisky, Bowmore.
