The menu and all explanations were in Japanese, but I&#8217;ve done my best to summarize everything in both English and Japanese. They are:<\/p>\n<p>COURSE 1 &#8211; Shunsai Kobachi (\u65ec\u83dc\u5c0f\u9262 &#8211; Small plates of seasonal ingredients):<br \/>\n* Nanohana Kumiage Yuba-ae (\u83dc\u306e\u82b1\u6c72\u307f\u3042\u3052\u6e6f\u8449\u548c\u3048 &#8211; Young Ferns of a Rapeseed Plant with Soy Milk Skin)<br \/>\n  &#8211; Ikura (\u3044\u304f\u3089 &#8211; Salmon Roe)<br \/>\n* Joshu Mugibuta Sakamushi Shimonita Negi (\u4e0a\u5dde\u9ea6\u8c5a\u9152\u84b8, \u4e0b\u4ec1\u7530\u8471 &#8211; Pork from Joshu that is fed a diet of primarily barley, together with Long Onions from Shimonita, Gunma, steamed with Sake. Joshu was the former name of a province of what is currently Gunma Prefecture.)<br \/>\n  &#8211; Oroshi Ponzu-an (\u304a\u308d\u3057\u30dd\u30f3\u9162\u9921 &#8211; Grated Daikon Radish with Ponzu sauce)<br \/>\n* Furofuki Daikon (\u98a8\u5442\u5439\u304d\u5927\u6839 &#8211; Thick-cut Daikon radish cooked in Dashi broth and served with seasoned Miso on top)<\/p>\n<p>COURSE 2 &#8211; ZENSAI MONO (\u524d\u83dc\u7269 &#8211; Appetizers):<br \/>\n* Tatami Iwashi (\u30bf\u30bf\u30df\u30a4\u30ef\u30b7 &#8211; Shirasu (Baby Sardines) dried in a way to form a large, mat-like sheet.<br \/>\nSilk Salmon Kobujime-yaki (\u30b7\u30eb\u30af\u30b5\u30fc\u30e2\u30f3\u6606\u5e03\u7de0\u3081\u713c\u304d &#8211; Konbu Sea Kelp-cured and cooked &#8220;Silk Salmon.&#8221; Silk Salmon is a trout brand from Azuma Fish Farm in Agatsuma County, Gunma. The fish are fed a diet containing mulberry leaves and coconut oil and taste like salmon, despite being trout.<br \/>\n* Fuyu Yasai Nama Harumaki Salad (\u51ac\u91ce\u83dc\u751f\u6625\u5dfb\u304d\u30b5\u30e9\u30c0 &#8211; Fresh spring roll with winter vegetables)<br \/>\n  &#8211; Koshin Daikon, Ice Plant, Paprika (\u7d05\u82af\u5927\u6839, \u30a2\u30a4\u30b9\u30d7\u30e9\u30f3\u30c8, \u30d1\u30d7\u30ea\u30ab &#8211; Watermelon Radish, Ice Plant, Paprika)<br \/>\n* Hakusai Yukari Sushi (\u767d\u83dc\u3086\u304b\u308a\u5bff\u53f8 &#8211; Japanese Cabbage sushi)<br \/>\n* Kumoko (Shirako) Kimi Koromo-age (\u96f2\u5b50\u9ec4\u8863\u63da\u3052 &#8211; Cod Milt Tempura with egg yolk batter)<br \/>\n* Wakasagi Horenso Cheese-yaki (\u516c\u9b5a\u6cd5\u9023\u8349\u30c1\u30fc\u30ba\u713c\u304d &#8211; Japanese Smelt with Spinach and Cheese Tempura)<\/p>\n<p>COURSE 3 &#8211; OWANMONO (\u6900\u7269 &#8211; Clear Soup Dish):<br \/>\n* Renkon Suiton Shitate (\u84ee\u6839\u3059\u3044\u3068\u3093\u4ed5\u7acb\u3066 &#8211; Suiton mixed with grated Lotus roots.
