By the way, “Matsumae” is a town in southern Hokkaido that thrived as the Matsumae Domain headquarters in the Edo period, and was a trading point between Japanese and Ainu people. Matsumae pickles are a traditional preserved food from this area, made with kelp, herring roe, and dried squid, offering a rich flavor and still loved as a representative food culture of southern Hokkaido. However! Whether it works in onigiri is another matter… Matsumae pickles are usually imagined cold from the fridge… Will the rice get soggy from the pickle juice? That’s the concern.
