Using a bamboo pole to knead dough is an old Chinese technique that is even hard to find in China nowadays. I believe there is a shop or two in Hong Kong, not sure about Taiwan and SE Asia. The noodles are supposed to have a texture different to noodles using other techniques.

You guys at ByFood should offer curated culinary tours. People tell you what they want to eat and you craft a tour to their wishes. Most tours I've been on in Japan are very good food but often all too touristy. Your catalog of booking options is pretty vast I bet you guys could easily side hustle some great tours
