Sushi Matsuba in Himi, known locally as Matsuba Zushi (松葉寿司), is an unassuming yet beloved institution in the coastal city of Himi, Toyama Prefecture. Founded over 60 years ago, this family-run establishment is now in its second generation. Situated about a 15-minute stroll from Himi Station, it’s tucked away in a quiet neighborhood yet draws both tourists and locals eager to enjoy Toyama’s celebrated seafood.

The interior is entirely tatami-style seating—no traditional sushi counter here. Instead, diners relax on low cushions in a warm, living-room-like space that invites leisurely meals and easy conversation. This setting is particularly family friendly, giving it a relaxed and welcoming atmosphere .

Menu offerings are straightforward and transparent: the same prices apply at lunch and dinner, with set nigiri plates, chirashi, and special “Toyama Bay Sushi” that celebrate regional delicacies. The “Toyama Bay Sushi” set, typically under ¥2,800, includes around ten pieces of nigiri featuring local fish plus a side of miso or fish-head soup—a signature pairing known as “ara-jiru” . Other popular options include a standard 10-piece nigiri, an upgraded 11-piece set with sweet shrimp, and a deluxe set featuring fatty tuna for around ¥2,300–2,800.

What sets Matsuba apart is its devotion to freshness and value. The sushi rice is made from local Toyama-grown grains, expertly seasoned to balance the rich flavors of the fish. Nigiri often arrives in small batches, allowing each morsel to be savored at its peak. Seafood selections include summer tuna, cold-season yellowtail, white shrimp, crab, amberjack, squid, and local favorites like “debukatsuo” and “hachimé.” White shrimp, in particular, are prized here for their natural sweetness and often sell out quickly .

Beyond sushi, diners have praised the broth in the miso soup, made with fish head stock and seasonal ingredients, offering a warm, soothing complement to the meal . Customer reviews emphasize the thickness of the fish slices and the satisfying portion sizes, with one visitor remarking “everything was delicious, and the price far better than Tokyo,” while another lauded the “plump nigiri and flavorful rice”.

Service at Matsuba reflects its small-town warmth. Longtime owner-chef—referred to as the second-generation master—and his attentive staff provide friendly, personalized service. Guests recall being offered extra pieces if they aren’t full, and being engaged in friendly conversation about fish varieties and preparation . The absence of a counter turns dining into a communal experience, similar to sharing a meal at a friend’s home.

Parking is limited to about eight to ten spaces, so visitors are advised to carpool or make reservations to secure a spot . Matsuba closes on Sundays and occasionally Monday evenings, so plan ahead .

In short, Sushi Matsuba offers a genuine Himi experience: seasonal Toyama Bay fish, served in generous portions, at fair prices, in a cozy tatami setting, with the hospitality of a local family. Whether you’re coming for a casual lunch, a celebratory dinner, or simply to taste the bounty of the bay, Matsuba Zushi delivers thoughtfully prepared sushi with heart and flavor—a true hidden gem in Toyama’s seafood scene. @TastyWaterOM

  1. SUSHI MASTUBA is located in HIMI, the coastal city of TOYAMA where seafood is incredibly fresh at any restaurant or onsen ryokan you step into. SUSHI MATSUBA is a long time favorite and respected sushi restaurant with thick cut sushi that is so fresh! I love fresh Toyama sushi, but even I was impressed with how fresh the fish was at SUSHI MATSUBA!!! You get your own semi-booth table, which offers privacy. And the ambiance feels like you are in a traditional Japanese home. Enjoy Toyama fresh sushi!!!
