This school combines a girls’ high school, a girls’ junior high, and another girls’ school— basically three schools in one. The cafeteria is split between the first and second floors. It’s made up of sister schools, both junior high and high school. Today is Friday, and every Friday we do a buffet. So we’re prepping for that. Fridays are intense—we really need to be on our game. Today’s menu: pork sauté with honey mustard, stir-fried udon, shrimp cutlets, and sautéed spinach with corn. That’s four dishes. Lunch starts around 11:30 or 11:40 today. Yeah, around 11:40. Before that, we’re also prepping bento lunches for the teachers, so we time the cooking around that. For the stir-fried udon, today’s ingredients are pork, cabbage, bean sprouts, carrots, and fish cakes. If you come by today just after 12:00, you’ll see 5–6 students all together saying, “Thanks! That was so good!” before leaving. We just love hearing that. Honestly, it keeps us going. As a nutritionist, I plan out the menus, and since some students have allergies, we also prepare alternatives for them. That’s part of the job too. We try to include things girls would like—trendy, cute foods. We think about presentation to make it look pretty and appealing. Especially the plating, toppings, and desserts—we really focus on those. We’re always thinking about how to make it look nice. When students say “that’s so cute!” Or when they say “thank you” to us, some even remember my name and say “see you!” It’s really sweet. It’s buffet day today. Today we’re making “An-flower” cookies, which are like flower shapes made with sweet red bean paste. I figured the students could probably do it once they tried, and I really believe in their abilities. Scored 78 in Japanese history. 78?! That’s awesome! Showing off, huh? We’re trying to let everyone pipe their own cookies. If you search “An-flower piping” online, you’ll find lots of examples. Each group should take 500 grams of white bean paste. Alright, let’s get started—come up here. Come on up to the front. For this cupcake, you can pipe the flowers directly, or make them separately and place them on top— totally up to you. Gently add a little air— and that’ll help form the edges nicely. Right here—see, when it holds a point? That’s what we want! Add just 2–3 drops of food coloring— even that small amount gives it great color. See how vibrant it already looks? Really colorful, right? You’ll press down using a scraper card. We’re using glassine paper for this. 5, 6, 7, 8, 9 Once you’ve made yours, we’ll check how far along everyone is, then move on to roses. Let’s try it out! Pipe it from this angle, bring it around like this— spin it as you go. You won’t know until you try—just do it! Add the color—put some pink in it. Oh, perfect! That’s it—that’s the look. Rather than copying exactly what I do, I think it’s better if they put their own spin on it. They keep saying “I can’t do it, I can’t,” but somehow they always pull it off in the end.   4. Our school had prison food delivered. No exaggeration, the exact same company. (and it wasn't Japanese prison food) 🙁

  5. The WHO, the “World Health Organization,” recommends one teaspoon of salt per day, which is 5 grams. I am 100% sure that the cafeteria food alone already exceeds this amount, since dinner is added on top of that and is also salty.
