It’s got a really gentle flavor, you know?
Like the old days. A curry with a gentle flavor. Curry, you know, to get to this point,
it’s been through a lot of trial and error. We’re going behind the scenes at Toyama’s
ultra-popular curry shop! It’s delicious.
So good. Takeout orders keep pouring in! Oizumi-cho, Toyama City, Toyama Prefecture Established 1977
Curry Shop Ito A popular curry shop known for its rich beef curry and
“Yasatama” – onions and mushrooms mixed with egg. 9:08 Second-generation owner
Mr. Ito (43) Preparing cream croquettes (My father) was originally a franchise owner. It was called Indian Curry in Ishikawa. Then he completely broke away from that. I took it over when I was 21, I think. So it’s been about 22 years since then. I became the representative three years ago, though. I built it from scratch myself. If lots of customers come in,
nothing makes me happier than that. Preparing the chicken cutlets Seafood toppings Like omelet curry with croquette topping The Yasa-Tama Croquette Curry is our top recommendation It’s definitely number one, right? Since we’re closed on Sundays, Saturday is when we get the most customers. About 600 people, I guess? On weekdays, it’s about 300 meals, right? (Cream croquettes)
We cut each one by hand. We coat them all by hand. It takes a lot of time and effort, you see. I guess the real strength of curry is takeout, right? Even if it gets cold, you can just reheat it. We sell a lot of takeout, you know. Takeout orders
are usually around 50 to 100, I guess. Bringing the Fukujinzuke to the table Fukujinzuke, essential for curry Add the mild curry roux Add medium-spicy roux The most popular medium-spicy roux Cut the beef for the curry Domestic beef shank Prepare the cream croquettes Coat with flour Cook the rice Cooking four sho at a time After all, cooking with gas makes it fluffy and delicious
That’s another point we’re particular about Capable of washing rice, measuring portions, and cooking Spicy curry Mushrooms Wash them thoroughly with water The characteristic of this curry is its light,
smooth texture A flavor that appeals to everyone We aim for that, but it’s tough
Because everyone has different tastes Mostly medium spicy Kids and people who don’t like spicy stuff get sweet There’s also a spicy option And above that, an extra spicy option You can adjust the spiciness as much as you want. There is a base spicy level, but it’s a two-step process.
Essentially, first you add the curry You know those solid curry roux blocks? You make that, then the final step Let it rest for a day. For homemade curry, I think it has lots of potatoes and carrots in it, but But mine doesn’t have any.
Well, the main ingredient is onions. You fry a huge amount of onions,
and that’s where you get the sweetness. Curry too, you know, to get to this point
I went through a lot of trial and error Now I think it’s settled down quite a bit If you call it a secret ingredient, well… Like leftover pork cutlet scraps
or leftover bits or vegetable scraps, you simmer all that too
and make it into soup. That’s quite the dedication, isn’t it? Zero food waste, you know? Nowadays, the term SDGs is really
pervasive among everyone, but It was originally about SDGs, you know?
Zero food loss. Drain the water from the cabbage Prepare the pork cutlets Prepare the takeout containers
for orders placed the previous day Prepare the shrimp tempura About 60% soft-boiled eggs
20% sunny-side up About 20% don’t have eggs I think most are soft-boiled eggs Soft-boiled eggs
with natto topping are super delicious If you ask us what we recommend most Probably the soft-boiled egg natto croquette If you don’t hate natto If my brother wasn’t here,
I couldn’t run the business anymore. He’s been a huge help. Until then, it was just me and my dad running things. And my dad’s getting older and older. Open at 11:00 Welcome! Customers arrive as soon as we open. Business Hours: 11:00 AM – 3:00 PM
