中華絨螯蟹(大閘蟹):
中華絨螯蟹(學名:Eriocheir sinensis),也稱上海毛蟹,俗名大閘蟹或河蟹,是一種主要生長在中國沿海河口地區的小型蟹種。
雖然絨螯蟹在淡水中度過大部分生命,但它們必須回到海中繁殖。在生命第四或第五年,牠們遷徙至下游,在有潮汐的江河口達到性成熟期。交配後,雌性繼續游向海的方向,在更深的水中過冬。在春天牠們回到鹹水中產卵。孵化出的幼蟹,遷向上游進入淡水,至此完成一個生命循環。
中華絨螯蟹是著名江南美食。這種蟹被中醫認為是具有寒涼性質的食物。由於過度的捕撈導致長江下游蟹種數量下降,相應地蟹的價格飆升。現在在適合蟹生長的地區,養殖業非常興盛。江蘇陽澄湖是最有名的中華絨螯蟹產地,此處出產的蟹以青背、白肚、黃毛、金螯聞名,人們慕名願以高價品嘗該處出產的螃蟹。大部份蟹以高利潤率出口上海、香港、澳門、臺灣市場。
大閘蟹的品嘗時間為中國農曆八、九、十月份,素有「九月圓臍十月尖,持螯飲酒菊花天」一說,即農曆九月吃圓臍雌蟹,十月吃尖臍雄蟹,此時甘香肥美,為人間珍味。在農曆六月有俗稱「六月黃」,也是別有風味的。
成隆行蟹王府:

禿黃油撈飯:這是成隆行的招牌首創。所謂”禿黃油”,是蘇州方言,意指”只有”和”純”,即這道飯菜只用純蟹膏和蟹黃熬製,不摻雜一絲蟹肉。取三、兩以上公蟹的蟹膏和二兩以上母蟹的蟹黃,以蟹油熬煮後,趁熱拌入米飯。蟹膏黏糯,蟹黃油潤芬芳,口感腴美。
蟹膏銀皮:成隆行的四大經典招牌菜之一。蟹膏由經驗豐富的拆蟹師每日現拆,軟糯鮮香;”銀皮”則選自國內手工粉皮老店,Q彈爽滑。兩者結合,口感粉酥油潤,餘韻綿長。
王府醉蟹:秉持一貫的匠心理念,由成隆行自己的食品工廠生產。以傳統寧波做法為基礎,輔以獨特調味配方精製而成。蟹黃將凝未凝,蟹肉冰涼柔軟,入口滿是甜濃酒香,風味獨特。
清炒蟹粉:選用優質大閘蟹的胸脯肉,以傳統做法快炒而成,講究乾香不能見油,保證了蟹肉的原汁原味,口感鮮香滑嫩。
其他特色蟹料:活拆蟹黃小籠包,內餡是活拆的新鮮蟹黃搭配黃金比例的黑豬前腿肉,皮薄湯多;蟬蟄餛飩,以薄如蟬翼的面皮包裹飽滿的大閘蟹鉗,湯底是自行發酵的酸湯,甘甜中透著一股辣味的酸辣。
Chinese mitten crab:
Eriocheir sinensis, the Chinese mitten crab (Chinese: 大闸蟹)or Shanghai hairy crab (上海毛蟹, p Shànghǎi máoxiè), is a medium-sized burrowing crab that is named for its furry claws, which resemble mittens. It is native to rivers, estuaries, and other coastal habitats of East Asia; from Korea in the north to Fujian in the south.
This species’ distinguishing features are the dense patches of dark setae (the “fur”) on its claws. The crab’s body is the size of a human palm, and the legs are about twice as long as the 3–10-centimeter (1–4 in) wide carapace.
Crabs are an autumnal delicacy in Shanghai cuisine and eastern China. It is prized for the female crab roe, which ripen in the ninth lunar month and the males in the tenth.The crab meat is believed by traditional Chinese medicine practitioners to have a “cooling” (yin) effect on the body.
Crabs from Yangcheng Lake are especially prized, since they are perceived to have sweeter meat. Most of the Yangcheng crabs are exported to Shanghai and Hong Kong, and high-profit foreign markets.

Cheng Long Hang Crab King Restaurant is a highly regarded restaurant in Shanghai specializing in crab banquets. It has won praise from diners and food critics alike for its profound understanding of crabs and exquisite culinary skills.
The founder of Cheng Long Hang, Ke Wei, was among the first in the Yangcheng Lake crab farming and business over thirty years ago.
