Ever wonder what those little spatulas at Hiroshima okonomiyaki shops are called? They are called “hera” (へら). If you’re eating in Kansai, the hera are used to cut and serve the okonomiyaki before eating it with chopsticks, but in Hiroshima, the local practice is to use the hera for everything: cutting, scooping, and eating right off the grill.
