Hello from Hakodate Airport! We’ve come all the way! Hakodate. Today, we’re featuring one of Hokkaido’s three major ramen styles: Hakodate Ramen. Focusing mainly on light, salty flavors, from long-established shops to new challenges. We’ll introduce a bowl that truly represents Hokkaido. Please enjoy until the very end! Now, let’s get started! About a 5-minute drive from Hakodate Airport. In a corner of Yunokawa Onsen district. Hakodate Menya Ichimonji, Main Branch. Located along Route 278. Near the Tropical Botanical Garden, along the coastline. The exterior is modern and clean. At night, the illuminated sign lights up the street beautifully. Inside, you can see the kitchen through the glass, giving a lively, immersive atmosphere. Counter seats and tables are arranged just right. Designed to be comfortable for solo visitors and families alike. The signature here: Shio Ramen, 1,100 yen. The soup base uses chicken bones and whole chicken. Abundant kelp from Minamikayabe is added. Additionally, the umami from clams and other shellfish enhances the flavor. The aromatic oil uses a hint of shrimp oil as a secret ingredient. It adds depth while keeping the soup clear. The noodles are homemade, medium-thin and straight. Smooth in texture with just the right firmness. Crafted to perfectly match the soup. You can also enjoy how the noodles soften slightly as you eat. The toppings are carefully selected as well! Chashu is about 1.5 cm thick. Grilled lightly to bring out the aroma while keeping the fat mild. With flavored egg, menma, spinach, and nori. Chopped green onions are arranged in perfect balance. Now, let’s dig in! The umami of kelp and chicken spreads gently. The shellfish flavor supports it from the background. The aroma of shrimp oil drifts lightly. And the accent of yuzu perfectly complements it! The texture with the noodles is outstanding, making you want to drink every last drop of the soup. The chashu is savory, with the meat’s flavor spreading with each bite. “Shio ramen can be this profound?” This bowl shows the unique depth of Hakodate’s ramen. By the way, the menu has more than just shio. “Chaccha-style Shoyu Ramen.” “Rich Miso Ramen.” “Local Chicken and Shrimp Wonton Noodles,” and more, offering diverse flavors. Enjoy ramen while gazing at the Tsugaru Strait with seagulls soaring above. You can also enjoy the unique maritime atmosphere of Hakodate. We thoroughly savored a bowl that represents the charm of Hakodate ramen. Now, let’s head to the next shop. Heading toward downtown Hakodate! Here we are, JR Hakodate Station! Impulsively bought some squid crackers. From here, we head to the long-established ramen shop, Jiyoken. Walking through the streets, let’s briefly look back at the history of Hakodate ramen. Its roots date back to 1884 (Meiji 17), with “Nankin Soba” served in the port town of Hakodate. A light, salty soup noodle brought by Chinese immigrants. This is the origin of today’s Hakodate Shio Ramen. In the Showa era, it became popular among locals as “Shina Soba.” Clear soup and medium-thin straight noodles became the standard of Hakodate ramen. Now, we’ve arrived at Jiyoken… however, Unfortunately, the last person in line was holding a sign saying “Closed.” Even if planned as part of sightseeing, timing is key; many people can’t get to eat here. If you absolutely want to eat here, it’s recommended to line up before noon! With the memory of this historic taste in mind, let’s head to the newly opened “Yowaken Plus”! Here, you can enjoy the oldest shio ramen born in the Meiji era reconstructed for modern times. Yowaken Plus inherits the tradition of Hakodate shio ramen, preserving the old flavors while offering a modern, clean shop that’s welcoming to younger visitors. The interior is clean, simple, and calm. Counter seats dominate, providing a space that’s easy for solo diners. The menu focuses solely on shio ramen. Oyster and clam shio ramen, 1,200 yen, Shishamo shio ramen, 1,200 yen, etc. A simple lineup highlighting the ingredients. The “Oyster and Clam Shio Ramen” is full of shellfish umami, with a clear, refined taste. The soup is rich with the flavors of oyster and clams, filling your mouth with the aroma of the sea in every bite. An elegant and deep flavor, perfect for shellfish broth ramen lovers. Straight medium-thin noodles cling beautifully to the soup, revealing their harmony as you eat. We couldn’t eat at Jiyoken this time, but at Yowaken Plus, we could feel both the history and new breeze of Hakodate ramen. Next, we head to Hakodate Menchubo Ajisai, conveniently located for a casual visit while sightseeing. This popular shop has multiple locations mainly in Hakodate, offering bowls that preserve the old flavors while being enjoyable for tourists. The main branch is in front of Goryokaku, long loved by locals. The interior is bright, clean, and calm. There are counter and table seats, making it easy for individuals, families, or groups to dine. The clear soup is light yet rich in flavor when you taste it. Medium-thin straight noodles go perfectly with the soup, sliding down smoothly. The chashu is tender, with perfect balance with menma and green onions. You can enjoy the taste of long-established Hakodate ramen, even while sightseeing. A bowl where you can fully enjoy the charm of Hakodate shio ramen. How was it?     私は駅前で行きやすく味も良い「しなの」さんが好きです
    函館出身の知人のオススメは、七重浜の「初代 社」さんと五稜郭方面の「狼煙」さんだそうです

    蛇足ですが、函館駅から徒歩7~8分のスーパー マックスバリュでは、美鈴珈琲や地域限定酒類などが駅や空港より安くゲットできるので、定宿ホテル(JR INN)から散歩がてら覗きに行きます😅

  3. ハセストとセコマからの函館シリーズですね。滋養軒は数年前コロナがまだ燻っていた頃に偶然人が少なくて食べられました。

  4. 塩ラーメンで1000円超えは、高過ぎると思いました。安くて旨い塩ラーメンを紹介したほうが配信的に面白いです 大川町の
    横丁ラーメンとか。
