From the morning drama “Bakebake” — this is one of its delights. Yamakawa. Matsue, in Shimane Prefecture, is where the 7th lord of the Matsue Domain, Lord Matsudaira Fumai, created his own unique tea style — the Fumai style. This new way of tea spread beyond the samurai class and took root among the townspeople, together with a love for sweets. Chōseiden from Kanazawa, Koshinoyuki from Nagaoka, and Yamakawa from Matsue— are known as Japan’s three great confections. In episode 2 of week one of “Bakebake,” Toki brings home a red-and-white square sweet she received from the Ushimizu family. You can also enjoy it at “Kissa Kiharu,” inside the Matsue History Museum. Its soft, delicate texture, like *rakugan*, and its simple sweetness go perfectly with matcha tea. While gazing at Matsue Castle beyond the garden, why not savor this traditional taste of Matsue?
