Everyone calls you ‘Arun.’ ” Staff: “Arun-san?” “Got it. Now then, today we’re making three
curries: chicken , fish, and vegetable . First, prep the beans . We’ll parboil
them . The beans come like this from India. These are the lentils for today’s
vegetable curry. ” (beans) This is basmati rice, an Indian variety . Everything except the
veggies is Indian. For the veggies, we mostly use local produce from
Hiroshima. Yellow mung dal (beans). Wash the dal. Small beans. Salt . Parboil. Next, prepare the biryani . Basmati rice (Indian rice). Wash it. Soak it in water. Staff) Arun-san, is this going to be the
shop uniform? Yes, we made it the restaurant uniform . Relaxed wear. The top part here is called a “kurta.” Staff) Kurta? Kurta . The bottom is pajamas. And actually , the Japanese word “pajama”
comes from India. That word … Staff) The origin? Yes. Crush the tomatoes . Ginger-garlic paste . Tomatoes. Spices. Preparing onions . Staff) You use quite a lot, huh? Onions, you see , form a really
strong base in Indian curry . Onions. Tomatoes. No flour or anything like that at all. Indian curry uses no flour. It’s made with
vegetables! Sharpening the knife. Cutting the washed onions. Onion cutting complete. Making chicken curry in the stainless
steel pot on the right. Making fish curry
in the pot on the left. Spice box. Staff) What’s that for? Spices. Bay leaves, cinnamon. Staff) Arun, how many kinds are in here? About 6-7 kinds . Staff) For the whole restaurant, how
many kinds are there? About 20 to 30 kinds . Staff) Do you put all of these in the
curry? Of course . In India, spices go into everything . Staff) Compared to Japanese curry , I’ve
heard Indian curry is incredibly good for
you . Well , it doesn’t use flour or anything,
just natural ingredients, right? Vegetables and meat, and all the flavoring comes from spices. Spices aren’t bad for you at all . Staff) When did you start learning about
this stuff? Staff) About curry? From home, right ? Most Indians start at home . Especially since I wanted to be a chef , it started with my mom. Started with making chai (tea) . Like dad making chai before work, or mom
helping make it . So, I have one younger brother, so I was
the older brother . No girls, so I helped mom little by
little . Staff) How old were you? I was really little. Maybe just turned ten
or not quite yet . Staff) Were you in elementary school
then? Yeah, I was in elementary school. I only went to high school, so after that, I studied more . I thought I didn’t need
to study any further to become a chef . I just studied spices. Oils, coconut oil , spices, homemade curry leaves, curry leaves, blended spices, lots of onions, ginger-garlic paste. Next, preparing the Kerala chicken curry . Wash the meat. Add the chicken . Turmeric, coriander powder , mix. Spices, homemade spice mix, paprika spice , salt. The spice aroma is incredible. Prepare tomato paste and coconut milk. From here, coconut milk—you can make it by
dissolving it in water. Water, coconut milk. Taste test . Add a little more spice. Finally, sprinkle some cilantro . Staff: Is this what Indian curry is
like? Yeah , it’s a bit more substantial . We
want it to be satisfying . Customers spend their
hard-earned money coming here, so if
they’re not satisfied, well… I’m just
like them. Preparing fish curry . Add turmeric . Rub it in . Season the fish. Mixing the fish curry spices. Six kinds of spices. Curry leaves. Plenty of onions. Ginger-garlic paste. Turmeric. Spices keep going in. Tomato paste . The seasoned fish. Water. Coconut milk. Arun-san brought something out . Staff) What’s that? It’s a fruit called tamarind. It’s quite sour. It has a really strong
sourness, so I taste it repeatedly. Coriander. The Kerala chicken curry is complete. Staff) Mr. Arun, by the way, you came in
at 7:30 today , right? Staff) What time does your shift end? Last order at 2:30, until 3:00 . Staff) And evenings? Open only on Fridays and Saturdays. Oil, tomato, cilantro. Fish curry is complete. Next , preparing the dal curry . Chopping garlic . Staff) How many years have you been in
Japan? It’s my 15th year now. I married
Sakurako and moved from her parents’ home
to Asaminami Ward . There happened to be a
shop relocating nearby, so I grabbed it . Staff) When did Spice Magic open here? It opened two and a half years ago on
Valentine’s Day. Our first wedding anniversary was on
Valentine’s Day, so we opened the shop one year later to
coincide with that . Garlic. Staff) Do you cook at home too? Sometimes. I like Japanese food too, but Sakurako usually does the cooking . Tomato, tomato paste , cilantro . Add to the parboiled dal. Ghee. (clarified butter) Okay, delicious. Just like always. All three curries for today are done. Meat, fish, and veggies still to go. Staff) Do you always make the same menu? It’s different every day. Staff) Does Arun-san come up with the
recipes? My body just remembers them now . Today’s curries are ready: Kerala Chicken Curry, Tomato Pepper Fish Curry, Dal Curry. And the very important rice dish . Preparing
“Biryani”. Mixing spices for the rice . The one who gave me sweets became the spice box . The shop owner’s brother , Mehra
Warun-san. He doesn’t speak much Japanese, so it
might not work , but the two of them converse in Hindi. Coconut oil. Staff) What do you like about Japan? The systems, you know? Simply put, the step-by-step systems are amazing. For example, hospital systems , school
systems… the systems from birth to death are
incredibly good. It makes it easy for people to live. Not easy, but comfortable. Compared to
other countries , that’s what I think. Everyone has their own opinion, though. The most beautiful place (in Japan) for me
so far is the metro stations Japan built . The stations are the most beautiful. Ginger garlic paste , tomato paste . Scallops—many people like eating them in
Japan, though they aren’t actually found there. I

Indian restaurant in Nishi Ward , I went
there as a customer. We were friends, and I approached her . Staff) Arun approached her? Yeah, yeah, she approached me . Then we
got close , dated, and got married. Sakurako was the first girl I ever

rather, a real Japanese temple. It’s like a
“shiro-muku” You know, a temple wedding. This is Buddhist, right? Sikhism… well , it actually originated from within
Hinduism . So it connects Buddhism and Hinduism . Love story. Close-knit family. Watering the chili peppers. The ones we used in the curry earlier.
This is what went into the curry . Curry leaves at the shop front. They grow abundantly in our home garden
too. Various vegetables and such. Today’s recommended three curries are
these: Kerala Chicken, Tomato Pepper, Fish, and
Bean Curry (Dal) . And today’s recommended Biryani is Coconut Tomato Scallop Biryani. The curries change almost daily, but we serve different Biryanis two or three
times a week. We make the curries based on the
vegetables and meat available when we go
shopping . The recommendation is definitely the
All-in-One (Lunch only). You get three curries , then the biryani
underneath. The biryani comes with yogurt sauce , and rice crackers on the side . Plus
salad and various side dishes. You can get free refills on white rice . We also have this recommended menu: Dosa
and Masala Dosa . Not many places in
Hiroshima serve these , so as an Indian, I
highly recommend them . We only serve them

看板にターバンが書かれていたのでシク教の方かな?と思っていましたがやはりそうなんですね。シク教はカーストの否定されていたり、やさしい宗教だな~と思っていました。だからアルンさんもやわらかい感じなんですね。お料理もどれも美味しそうです。
俺、マレーシアで7年間働いてて、あそこのカレーめっちゃ好きなんだ。インドのカレーとほぼ同じ味なんだよね。マレー系とインド系、両方からカレーの作り方いろいろ教わった。インドカレーと日本のカレーの違いって、基本ココナッツミルクとスパイスくらいなんだ。家でも作ってみるといいよ
