Aibetsu Shokudo Ochikochi is a restaurant that attracts many customers from far and wide for its specialty pork belly. It is a converted private home that operates as a restaurant, and operates as a restaurant during the day and as a reservation-only izakaya at night. So, we will start filming by preparing the pork belly . As they also operate as a private lodging facility, many customers visit on their motorcycles from Honshu , and many customers visit during the autumn foliage season and mountain climbing season. Many people who go mountain climbing to Mt. Asahidake and Mt. Kurodake stay here, and since Sounkyo is quite far away, many people stay in Aibetsu as it is conveniently located. I will also introduce private lodging facilities later when I have time. I think the pork belly block from Hokkaido that will be used for the braised pork has arrived. Today’s stock is small, but we have been purchasing pork. In the summer, pigs tend to be small, so this year Especially due to the heatwave, many of the pieces are not very meaty. When preparing our specialty braised pork , we hand-cut each piece, and we want to make them even, but there are bound to be discrepancies depending on the shape of the meat. We apologize for the difference in size, sometimes 400 grams, or 340-350 grams, but we ask for your understanding that there will inevitably be differences in size and shape. If there is small meat left over, such as from the edges, it cannot be used for braised pork, so we use it for meals such as staff bowls or kakutama bowls. The cut meat is browned on the surface in a frying pan . After cooking the surface, the meat is laid out in a pot and simmered slowly for a long time in a special sauce. Once the preparation work had calmed down, we were given a tour of the private lodging facility and the surrounding area . It is also recommended to heat wine and enjoy mulled wine while watching the fire in the wood stove. At the moment, reservations are only accepted by phone, but reservations can also be made by fax. We also had a look inside the accommodation . It is designed to accommodate four people, and is fully equipped with a living room and kitchen. There is also a washroom, bath, and washing machine. In front of you is the Aibetsu 。 English: There is a family ski resort, and in the winter people come to ski, so the owner has purchased a snowmobile, and is considering allowing it to be used as a private slope from the time municipal operations close in February until April. Many people visit Aibetsu Town for rock climbing, and some guests stay overnight when they do. There is also a very rare female raccoon figurine, which was made quite a long time ago, and the owner came across it by chance and begged an antiques shop to give it to him. He had wanted to place it next to the sign at the entrance, but as it is a precious and important item, he has now placed a small kappa figurine there instead. In the winter, elementary school students on their way to school dig up the kappa figurine, which gets buried under the snow, and take good care of it. The small kappa figurine under the sign at the entrance is a mascot-like object beloved by local children, and has been featured in newspapers, etc. Another thing that the owner treasures is the tuk-tuk that he uses at his private lodging facility. It is well maintained and is a very precious tuk-tuk, and he has traveled long distances in it, and apparently he has even traveled all over the country by boat. The next day, we started filming with preparations for opening the restaurant. We prepared a dish using rare mushrooms that are unique to Aibetsu Town, using a brand of mushroom called Yukinoshita. The owner has worked in the forests for many years, and is a “mountain specialist” with a wealth of knowledge about forests, mushrooms, and wild vegetables all over the country. He prepares his specialty, braised pork belly, the day before . He prepares about 30 pieces of braised pork belly in one pot, and since it was a weekday, he had about 60 pieces of braised pork belly prepared. On weekends, he sometimes receives more than 100 customers . He prepares about this amount of soba soup with plenty of mushrooms on weekdays, but sometimes it doesn’t seem to be enough. The braised pork belly set meal is the most popular menu item, and All the food is locally produced and made using local ingredients. They used to use fresh soba noodles, but as the number of customers increased and they could no longer keep up with the cooking, they started using dried noodles made from buckwheat flour produced in Aibetsu. Aibetsu Shokudo Ochikochi’s original product, “Ai Sauce,” is sold in three special sauces made from beetroot, aronia, and raspberry, and has been featured in “JP01,” which is distributed as a return gift for hometown tax donations, the Hokkaido Shimbun newspaper, and roadside stations. They use Aibetsu-produced Yumepirika rice and hydrogen water, and the rice is cooked in a gas pot. Emi, who mainly cooks, used to work as a chef at a hotel, and in addition to the daytime business, she also prepares the evening course menu (reservations required). Aibetsu Shokudo Ochikochi operates as an izakaya in the evening, and in addition to the fresh lamb jingisukan course and the chef’s choice course, she had a delicious monjayaki that she tried in Asakusa, so she decided to serve it in the evening course. We also have a table for sushi. We have been featured in the travel magazine “Jalan” and various other magazines, and have been featured in various media as a recommended restaurant in Aibetsu Town and central Hokkaido. Due to the recent rise in prices, the purchase price of pork we purchase has risen sharply, and the price of rice has also risen, so we are barely making any profit. The cost of rice alone is considerable, but since we prepare 30 kilograms of rice alone per day, the rise in rice prices is quite tough. We use buckwheat flour from Aibetsu, and have a strong aroma of 28% buckwheat soba. When boiled, you can see the buckwheat husks, and the soba has the flavor and aroma of buckwheat. The “Kakuni Challenge Special” soba menu, which serves approximately 30 people, offers a special bonus if you finish three simmered pork skewers, a large serving of rice, and soba noodles within 30 minutes. Only one person has been able to complete the menu so far, and even that challenger said that the soba soup at the end was the hardest part. Even before opening, people were in front of the store. Customers begin lining up for the restaurant to open. Our visit was on a weekday, but there were about 10 customers waiting. As soon as the restaurant opened, it was nearly full. The menu primarily features dishes using braised pork, and there are three sets: A, B, and C, each of which includes a half-sized braised pork dish, rice, and three types of noodles . Set A includes soba noodles with plenty of mushrooms , a half-sized braised pork dish, rice, and soba noodles. The noodles in the set, whether soba, udon, or ramen, are all served in single portions. The set B, which can be paired with shio ramen, is shio ramen . Here, we ordered the braised pork set meal, which includes a large braised pork dish, rice, mushrooms, and a bowl of soba noodles. Braised pork fried rice. During the lunch rush, orders for the braised pork set meal are concentrated. The floor is mainly taken care of by the owner’s son, who handles orders, accounting, and serving food. If you order extra rice, it’s replaced with a rice bowl . You can also order extra large or extra-large rice. The extra-large portion is an unbelievable size. We haven’t received any orders yet, but we do have a menu item called “Double,” which includes two stewed pork cubes. Because the pork cubes are so soft, they tend to break or crumble. Sometimes, two long cubes are served, but sometimes two round cubes, like this one, look like the letter W, so we call it a “Double.” The “Pork Kakuni Set Meal” (Two Stewed Pork Cubes) and the “Mushroom and Beet Curry Rice” menu all come with a side of wankosoba noodles, so we’ll boil some more before we run out. The “Enoki Dandan Donburi” ( Enoki Mushroom and Beef Dumpling Bowl) is made with finely chopped enoki mushrooms and minced meat, and is a recommended menu item by the owner and regulars. The “Ochikochi Meat Bowl Set,” which offers a variety of donburi dishes, is a great value set that includes a half-sized Enoki Dandan Donburi (Enoki Mushroom and Egg Bowl), a staff member’s bowl, a pork cube and egg bowl, and wankosoba noodles. The braised pork is slowly cooked over a long period of time until it’s soft enough to cut with chopsticks, and the sweet and spicy sauce goes perfectly with rice. Aibetsu Shokudo Ochikochi is a restaurant famous for its Aibetsu Town specialty mushrooms and braised Hokkaido pork.
