【麻布Lasen】液体窒素も登場する料理【季節のコース・招待日和】
Azabu Lasen. Seasonal dinner course. Taking advantage of the invitation weather, I had lunch at Azabu Lasen this time. The closest exit is from the south 3rd exit of the parking lot from the underground passage of Azabu-Juban Station. The restaurant’s name is “spiral”. A spiral staircase with a beautiful decoration reminiscent of a subtropical forest runs through the center of the two-floor restaurant. Although I didn’t request it, I was given a private room. The interior is calming with ivory and sepia tones. I was able to reserve this seasonal course through the invitation weather during the lunch hour. I used the invitation weather’s special offer of one dish being free. Today’s menu. Non-alcoholic sparkling wine. I ordered a mimosa, but forgot to take a picture. New onion, ark shell, barracuda. On the left is a cold potage of new onion topped with seared ark shell. The spoon holds grilled barracuda, Nasu marinade and lemon cream. In the hot season, cool soup is delicious. I ate this in one bite. Broad bean consommé. Broad bean mousse on top of consommé jelly. Topped with salami and fennel. A refreshing dish that is perfect for summer. For me, who can only make simple dishes, the chef is a true genius. Aurora salmon, pear, beets, liquid nitrogen. Liquid nitrogen!? The Aurora salmon is a semi-raw type of mi-cuit, slowly baked at a low temperature of 40 degrees. Now, he will make a fruit sauce in front of you. Pear and beet puree is frozen with liquid nitrogen at minus 190 degrees. Even if you eat it as it is, it’s like a sorbet and is delicious. It has a texture like Dippin’ Dots. The guy is completely white. It’s like training at a waterfall. The salmon fibers have collapsed and it’s very soft. It was delicious enough as it is. The fruit sauce is complete. Dippin’ Dots The brown sauce is an anchovy-based sauce. The white powder is a spicy powder made with walnut oil. The black is black olives. You can enjoy Aurora Salmon in a variety of flavors. He speaks slowly, so you can understand him even at double speed . Bread on the side. And smoked butter. This is incredibly delicious. It is whipped, so it is very soft and light . Sea urchin and dried mullet roe. Cream pasta with raw sea urchin and Italian dried mullet roe. The sea urchin pasta is rich, and I get tired of it with one serving, but this amount is just right and I was able to eat it very deliciously. Abalone, turban shell, apple, and risotto. This risotto allows you to enjoy the texture of the apple. It has a slight sourness and sweetness. Apple and abalone. Ruby chocolate air. It is a light air chocolate. It was like a sorbet with a chocolate flavor that was not too strong. Hokkaido deer with port sauce received from Mr. Matsuno. This is venison hunted by Mr. Matsuno, a legendary game animal. It arrived from Shiranuka-cho, Hokkaido. The sauce is made by boiling down sweet port wine. Meat received from a legendary game hunter… It’s a vegetable garnish. The lean meat had no odor, was soft, and had a proteiny taste. Memorial plate and cookies , Happy Birthday Matcha flavor and chocolate flavored cookies. Here we had another drink. Shirley Temple, and what was the other one called, blood orange jelly, rosemary granita. It was topped with melon cream and mascarpone cheese. It was also covered with a lot of powdered sugar and looked delicious. The last tea. You can choose your favorite tea from these. You can open the lid and smell it. I chose blue tea with butterfly pea. In a glass cup, it should look even more beautiful blue. If you add lemon syrup, the color will change to purple. Litmus paper. This is peach tea.
