day. During the year-end and New Year’s period , we use 90 to 100 kilograms of flour
alone . This year’s maximum was 100 kilograms. We adjust the salt and water ratios
according to the seasons and knead the
dough. After kneading , we let it rest for about
30 minutes and repeat the foot-stomping
process three times . Ehime Prefecture, Matsuyama City, Dogo

thickness. The thickness of the noodles is subtly
adjusted according to the season. During the cold season when cold udon is
popular , the noodles are slightly thinner
for a smoother texture. During the warm season when hot udon is
preferred, the noodles are slightly
thicker for a heartier bite . Pressure cooker: As the noodles boil, their surface becomes
glossy and transparent . Visually inspect,
touch with bare hands to confirm Rinse the cooked noodles in water to
remove the surface stickiness. Soak in cold water to give the noodles
elasticity. Customers line up before opening . Parking available in the north, south,

operation. The previous owner ran a ramen shop or udon shop, and we just
took it over as is. The equipment from back then is still being used. It’s
been over 20 years , so it’s not in great
shape . Pork , sesame oil—heat it well before stir-frying the
meat. Add the ingredients and stir-fry quickly . Pork soup ingredients (pork, radish,

scallions) We offer refills of the pork soup . The menu item with pork soup is just one bowl, but it’s quite filling . We skim off the scum, dissolve the miso, cool it to let the flavors meld , and then we make the broth for the hitsumabushi . We
serve the grilled pork at the end, and
customers eat it as hitsumabushi tea rice . We make the broth for that as well .
Staff: What kinds of dishes do you serve? We use our own sauce to make grilled pork , which we serve as grilled pork donburi and pork hitsumabushi . There are four types of set meals. The pork is prepared by marinating pork belly and loin, which has more fat but a deeper flavor. Three slices of pine are placed on top . Staff: Do you add one slice at a time? Yes What kind of customers do you have? Mostly working people and students from
the nearby university . How did you come up with the idea for
the pork kabayaki ? I used to work at an eel restaurant, so I thought about what ingredients would go well with the
sauce . Pork seemed like a good match, and since no one else was doing it, I
decided to give it a try. The eel sauce is already delicious on
rice, so I thought it would work well with pork . Staff: Is there a theme or something you
prioritize at the restaurant? Eating eel every day is a bit pricey, so we want to offer something more
affordable that fills people up and makes
them happy . We want to make sure we don’t
disappoint customers who take the trouble
to come here . If they feel satisfied, that’s the best
outcome . Staff: Is the meat for one day’s worth? It’s for one day on weekdays. We boil it over heat , wait for the sc um to rise , then wash
it . Once the scum comes out, we remove it from the pot , wash each piece carefully, and boil it in a pressure cooker with broth for
about 10 minutes . We wait for orders in this warm state. It takes about two hours of preparation to
complete. In the past , we used charcoal grilling,
but recently we got new machinery that uses infrared rays . The heat output is quite high We purchase rice from farmers in Tokushima
Prefecture who mill it fresh in the
morning . Staff: How many times a day do you cook
rice? About 5 to 6 liters. We want our customers to enjoy delicious
rice , so we never skip morning rice
milling . The rice is cooked to be shiny and
fluffy , and it’s served with unlimited
refills . The meat is flavorful, so one bowl of
rice might not be enough . Staff: What do you usually do on your
days off ? I ride a bicycle or go hiking. Tofu, orange . Staff: Have you been a chef for a long
time? Yes , I used to be a craftsman at an eel
restaurant . Was that the inspiration for opening
this place ? Shredded cabbage , carrots, preparing ingredients for tomorrow’s pork
soup, fried tofu . The owner’s wife meticulously wipes down every corner of
the tables . Cleaning the entrance. Pork Hitsu Mabushi Princess (mini size)
