There are many long-established yatai, and it is next to the new public offering yatai “Tenjin Yatai Zonochan” that we introduced the other day. It is a popular yatai that opened in June 2025 in front of BiVi Fukuoka. The owner has arrived . The owner set up the stall together with the head chef of Nakasu’s popular yatai “Tsunatuna”, which opened in 2023, and on this day, the head chef of Tsunatuna was also there before the opening. The head chef of Tsunatuna heads to prepare his own yatai, and the yatai standby begins. As you would expect from a yatai owner with a wide circle of friends, it was impressive to see him calling out to various people even while his yatai was standby. This is Ninotsugi’s yatai . He has been supporting us since the opening of Tsunagane, and when I was a student I worked part-time at the oden stall “Minechan” in Nakasu. He has been running the stall for quite a long time, and the beautifully tiled counter is distinctive. This stall was opened by the owner of the long-established tempura stall “Yatai Mori” in Nakasu, who passed away and is no longer in business. However, I talked to his wife, and she said that if a young person could try hard, she would hand over the stall to me, and I was able to take it over. The owner had worked hard for many years without taking a break, so I wanted to take over and run it, although it’s not his genes, but because it was a stall that had been used for many years, We have repaired it in various ways and have been using it ourselves. It is a refrigerated case that was given to us along with the food stall, but we don’t have any food to cool, so we want to use it as it is and put plants in it as a display case. We hang the curtain and start business. As soon as we start business, customers come in . It seems that it is their first time using the food stall. The first dish of the day is octopus, sausage, rolled omelet , specialty dish “meat and pork dumplings” and fried rice with meat sauce. A customer came in as soon as we started business, so we started business. Then, it seems that I forgot to set the Instagram story notification.The next specialty of Hakata Yatai is “Wagyu Motsuni (Japanese Beef Offal Stew)”. As the sun goes down, customers come in one after another.Speaking of Hakata Yatai, we received an order for Unzen Ham, Mentaiko, and Dashimaki Tamago (Japanese Rolled Eggs).The customer who came in seems to be a customer who we have met before at another yatai.Unzen HamThe other day, the owner of our fellow yatai “Hakata Yatai LEF”, which opened in 2025, came to visit us, and the customer seems to be a regular at Yatai LEF.Customer : “You’re friends with the owner of Yatai Tsunagi-no-Yatai, right?” Owner: “Yes, we started Tsunagi-no-Yatai together.Originally , when I was working at a yatai in Nakasu, I worked at the yatai next door.Yatai I knew the owner of Mentaiko Addict, and he worked at Akanosuke in Nakasu, and he was connected to the neighboring food stall, and I worked at the food stall next to that. When the Nakasu tempura food stall Mori-san passed away, he gave me the stall and I started my own food stall using it. Mentaiko rolled omelet Japanese beef tripe stew A regular customer came by . The shumai has a strong flavor, so you can eat it as is. Meat shumai is a popular menu that many customers order. Dishes using Japanese beef tripe are also popular. Miso-fried horumon Kimchi fried rice Next to Hakata food stall, we offer three types of fried rice, kimchi fried rice, and meat-based fried rice. Here, we ordered a new menu using Japanese beef tripe . Champon noodles added to the motsuyaki champon Popular menu “motsuyaki champon” Dashimaki egg is also available. Popular, you can order plain dashimaki and mentaiko dashimaki tamago, which is made by wrapping mentaiko in cod roe, to your liking. Introducing the menu offered at Hakata Yatai Ni No Tsugi. Menu items include the specialty shumai and dishes using Japanese beef offal, fried rice, dashimaki, tonpeiyaki, chive and egg , and more. The drink menu is also extensive, offering beer, highballs, chuhai, sake, shochu, and non-alcoholic drinks to go with your meal. I tried the motsuyaki champon and the specialty nikuniku shumai, which I had been curious about. The chewy thick noodles and plump Japanese beef offal are delicious. The meaty shumai made with coarsely minced meat is also recommended. A newly opened and popular yatai, “Hakata Yatai Ni No Tsugi,” is a yatai that is a hot topic, with the concept of the yatai being to let go of negative feelings and events and enjoy the yatai to the fullest.

I love watching these videos. These Yatais are fantastic designs, so much prettier than the food trucks and trailers we get in Europe. Watching the controlled chaos when they're set up, unfolded and equipped. Fascinating.
And the food… Are works of art. Not what I would expect of what would be considered a 'fast food stall' elsewhere.
Even the Fried Rice is served up beautifully.

屋台もりさんの四隅を柱で支えるところ、冒頭のネタケース、屋根板の白い部分などは辛うじて前任者の面影がある。
傷んだ部分は大幅に新しくなったので、元が屋台もりの一式だと気付く人は殆ど居ないだろうね。
こうして新しく生まれ変わった屋台が、新規出店する店主に受け継がれるのは素晴らしい文化だと思う。
