Currently, the current representative, who has taken on the name “Second-generation Inue Mitsuo”, has taken over the business, and as a representative restaurant in Hiroshima, many customers visit every day. Inside the restaurant, there are still photos from when it was operating as a food stall. In addition, there are posters of the history of the first generation and okonomiyaki, and a photo of the first generation owner with a smile that seems to speak to you. Currently, the first disciple, Kamikawa, has taken on the name “Second-generation Inue Mitsuo”, inherited the taste and techniques of the first generation, and is focusing on training and mentoring the younger staff. Even during the shoot, it was impressive to see him mentoring and communicating with the younger staff. Second-generation Inue Mitsuo The motif of the mayonnaise cap is the red helmet of the Hiroshima Carp. A large amount of cabbage is shredded and used generously in the okonomiyaki. Once the preparations for opening are complete, a morning meeting is held and the store is ready to open. Customers start lining up 20 to 30 minutes before opening time, and the store opens at 11:30. Within a few minutes of opening, the store is full. Okonomiyaki orders are coming in all at once. In addition to okonomiyaki, the store also offers teppanyaki dishes such as oyster grills and “senjigara ponzu,” a Hiroshima local dish of grilled pork stomach. Regular customers who have been coming since the time of the first store owner have also been coming to the store. Speaking of Hiroshima, oysters are a popular specialty and a menu item that many customers order. After the peak hours had calmed down and it was time for the last orders of the lunchtime, we ordered okonomiyaki. We ordered the most standard okonomiyaki, “soba niku tamago”. The ingredients for the okonomiyaki are your choice of squid, shrimp, squid tempura, mochi, green onions, DX (deluxe) specials with multiple ingredients, special specials, and okonomiyaki with oysters are also available. Plenty of cabbage, yakisoba, and sweet and addictive Otafuku sauce are delicious . Otafuku sauce with mayonnaise to change the flavor. Mitchan Sohonten Hiroshima is also crowded with many customers from lunchtime, and as many tourists from overseas visit, English menus and menus translated into Korean and Chinese are available.
