The area around the Hokkaido Prefectural Government Office uses natural well water, which is different from regular tap water, making it the perfect environment for making soba noodles. There are many areas in Sapporo that are troubled by water shortages, so the ability to use high-quality water is sometimes envied. With this environment where natural well water can be used, soybeans can be made in this space without having a factory. We prepare soba in advance. The amount of soba we use in one day is over 50 kg in flour form, so when we add water and make soba, we prepare a considerable amount of soba. This noodle-making machine is a special machine that was custom-made by the soba master at the time, and without it the soba we make now could not be made. This machine was made in 1978, and I’ve heard that there are only two or three left, so we keep one in storage in case of an unforeseen event. This machine is the only one that can make soba noodles that are this long and have a good texture, and it is used in udon shops and is called a knife cutter, but it is not possible to make the soba noodles like we make now. We are particular about the flour we use, and The soba noodles are kneaded using flour that is more expensive than buckwheat flour. When the soba noodles are boiled using this flour, they become pure white and have a rich soba soup, so they are particular about the flour they use. They serve a rich-tasting soup to go with the delicious soba soup. This process cannot be stopped, so they finish it all at once. Depending on the day, they repeat the preparation of this soba in several sets, preparing the soba to be served the next day after closing time. The next day, we were able to take photos of the restaurant during business hours. The retro “Dokai Shokudo” sign that was used before the relocation is still hanging at the entrance to the restaurant. The restaurant opens at 9:30 in the morning, and a breakfast menu is also served, but the shoot began with the preparation for lunch. The wok-sized extra-large frying pan is a must-try. We prepare a large amount of pork ginger fried at the raipan. During this period, we also prepare fried scallops , which are served as a daily lunch special. At lunchtime, we have many customers and the pork ginger fried and scallop fried dishes disappear in an instant, so we prepare them in large quantities . Even while we are preparing, orders for breakfast and soba noodles continue. We boil the soba in a large pot similar to the size used in large hotels. The bowls for Zaru Soba vary in size, but these bowls also disappear quickly at lunchtime. The current size is “medium” . I previously had a large special, but the bowl was square. This is the regular Zaru Soba “Large Zaru Soba”. This square bowl is the bowl used for the large special . I don’t know how much the soba weighs, but… The soba here is only a small part of the total, so if all the boxes were stacked on top of each other, they would reach the ceiling. On busy days, all the soba would be gone in a day. Prepare the soba soup in a pot. This is the “Dai Toku Zaru Soba.” Unlike regular “Zaru Soba,” “Toku Zaru Soba” is served with a special hot soup. The “Dai Toku Zaru Soba” contains about 1 kg of soba just for the amount of soba. Soba fried rice . The daily lunch is a set meal of fried scallops with homemade tartar sauce. The special soup for the “Toku Zaru” contains a variety of ingredients. In addition to the cold soba noodles , orders for hot soba noodles are also increasing . 自分もたまに「大特ざる」食べに行きますがなるべく昼をずらした時間に行ってます
元々の常連さんに迷惑かけたくないしそのほうが待ち時間も少ないですしね。
大特(だいとく)ざるそばいつも食べに行ってます。
ここはほっけ焼き定食もおすすめです。他所で食べるよりもよっぽど満足感があります。
すごいですねぇ!!ビックリです。
混む時間帯を避けていってみたいです。
