Wanting to be as good as a man is a odd motive to me as I don't view them as better in the first place.
To me, it doesn't matter if the chef is a man or a woman, as long as the quality of the food is good!
I also heard that the vast majority of Sushi chefs are men due to when women have their periods their taste can change. It was something like that

This is what I learnt from Japanese Chefs, learnt Nippon and Surgery with Yokohama team of Doctors. Food, Scapels, 'n precise Swordwork, then language here in America. Was fun 2 years training.
