On a night in Kochi, I casually walked into a local Chinese restaurant. I ordered a set of ramen and half fried rice. From the back of the shop, I could hear the sound of noodles being made. The elderly owner, without missing a beat, hand-made the noodles, which made me want to savor every bite.
