We enjoyed a very nice Japanese breakfast at Kayotei Ryokan (かよう亭) in Yamanaka Onsen, Kaga, Ishikawa Prefecture, Japan. The explanation of each dish was done in Japanese, so I’ve tried my best to describe them here in both English and Japanese. They are:
* Grape Yogurt with Maple Syrup (葡萄ヨーグルトとメープルシロップ)
* Tennen no Iwanori (天然の岩のり – Natural (not harvested) Rock Seaweed)
* Hakusan Kata Tofu (白山堅豆腐、hard tofu made in Mt. Haku) with Wasabi Miso (ワサビ味噌)
* Kaga Maruimo (加賀丸いも – Kind of black-skinned Yam from Kaga)
* Horenso Ohitashi (ほうれん草お浸し – Spinach in Cold Dashi Broth)
* Tsukemono (漬物 – Pickled vegetables)
* Ochanuke Kombu (お茶抜け昆布 – Edible Kelp Seaweed)
* Yudofu (湯豆腐 – Tofu cooked in Kombu stock)
* Hatahata & Tarako no Konro Yaki (焼き鰰と鱈子のコンロ焼き – Japanese Sandfish and Pollock Roe Charcoal-grilled on a Japanese Konro)
* Misoshiru (味噌汁 – Miso Soup)
* Dashi Maki Tamago (だし巻き卵 – Japanese Rolled Omelette mixed with Dashi)
* Gohan (ご飯 – White Rice)
