On Saturday, February 14, 2026, the Sake Brewery Tour in Yokkaichi, organized by the Nagoya Regional Taxation Bureau, was held with the participation of 12 international students from seven countries and one Japanese student supporter from Mie University. This tour was organized in response to the December 2024 registration of “Traditional Japanese Sake Brewing” as a UNESCO Intangible Cultural Heritage. It offered participants a valuable opportunity to learn about Japan’s unique fermentation culture, including sake, miso, and soy sauce.
The first stop was Ise Kura, a rare brewery that continues to produce soy sauce and miso using traditional wooden barrels. These barrels, in use since the brewery’s founding in 1914 (Taisho 3), are home to long-cultivated microorganisms that create the brewery’s distinctive flavors. Participants listened attentively to the explanation, fascinated by the depth of tradition and craftsmanship.
Next, the group visited the Yokkaichi Pollution and Environmental Museum for Future Awareness, where they received an English-language tour. Despite the limited time, students learned about Yokkaichi’s postwar recovery, the environmental challenges faced during Japan’s period of rapid economic growth, and the community’s efforts to overcome pollution. The visit offered a meaningful reminder of the importance of environmental conservation.
The final destination was Maruhiko Sake Brewery, a long-established brewery founded in 1867. Students toured the atmospheric brewery while learning about the traditional sake-making process. They also had the chance to stir fermenting moromi (mash) with a long wooden paddle, eagerly asking questions and engaging with the experience.
The tour concluded with a sake tasting session, where participants enjoyed three varieties of sake paired with specially prepared dishes. The head chef also performed a powerful shigin (traditional Japanese poetry recitation), leaving a lasting impression on everyone. Students shared their thoughts, saying, “It was sweeter and easier to drink than I expected,” and “It tastes smoother when paired with food.” One student, who is returning home next month, was seen holding a bottle of sake tightly, saying it was a gift for their father in Vietnam–a heartwarming moment that captured the spirit of the day.<\/p>\n
