Cosy December cold days with puff pastry cake, days in december
Recipe:
My cake mold is 20 cm diameter
Ingredients – Puff pastry, 2 packages of vanilla pudding (2x 40 g), 600 ml milk, jam, 60 – 70 g butter, icing sugar, rum (some alkohol into cream is optional – use what is common to add into baking in your country 🙂
Cut two same parts of dough and put in into the mold with parchment paper, make a few holes into the dough and let it bake in preheated oven on 180 C (340 F).
Make vanilla pudding and use two packages and just 600 ml of milk. Cream will be thick but we want that! I usually add just 3 or 4 tea spoons of sugar (according to your taste but there is sugar topping on top of the cake so be careful with sugar). When it´s prepared let it fully cool down. Once it´s cold, mix it with butter and spoon of rum.
Put one part of pastry back into mold, put cream on top and make thick layer. Flip over the second part of the pastry on top of the cream. We want to have nice flat top.
Put some jam on the pastry – little bit sour jam is always better (like currant jam).
Mix some icing sugar with tea spoon of milk and make sugar glazing.
Put this glazing on top of the jam and that´s it!
Let it cool down for a few hours, the cream will hold better on the cake.
