Jamie… hmmm. He always says it's his interpretation of… I'm not a fan but he does have some great shortcuts, most of which I found for myself such as making the béchamel in the same cooking pot to save on washing up. He also works a lot with Genaro Contaldo, with whom he toured Italy and learning and making dishes for the nonnas. Maybe you are being too picky about him and some of the other cooks? By the way, Happy Christmas, which for me is today.
