Ah yes "The Dark Souls Remastered Experience",a game that is basically made out of grey,white and black and has some happy ass music playing on the background as you kill people that have went insane ( i know this is your type of editing its just not my personal favorite)
In Dark Souls 1, you only roll in 4 directions (front, back, left, right) when locked on. That's why it felt like you were rolling in a direction you didn't choose in the gargoyle fight as you can't roll diagonally. Instead, if you push your stick to the bottom left, the game randomly chooses to either roll you left or backwards
When I first started this game a few years back it frustrated me a lot until I realized death is apart of the game no matter what your gonna die lmao but the dark souls series is truly amazing

btw you can cut of the gargoyles tail to deal a bunch of damage if you ever decide to play again, and it applies for most bosses with tails to.
