What’s going on Initiate, Bird here and in this video we are going over the Hunter that started it all, The First Hunter Gehrman.
At the start of the beast scourge, Gehrman was the first of the Yharnamites to take notice of the beasts and became the first hunter. His garb tells us that by making adjustments to his everyday clothing and tools, Gehrman equipped himself to hunt the beasts. He became a well-known pioneer in the field of hunting beasts, taking up responsibility as a teacher and weapon designer. One of his most prominent apprentices was a woman who was distantly related to Annalise, Queen of the Vilebloods, the Rakuyo wielding hunter, Lady Maria. Gehrman had a curious mania over Maria, which she was unaware of.
As the plague spread and more people became aware of it, the church began sending out specially-sanctioned hunters of their own, and even recruited civilians to join the hunt. Soon enough, Gehrman and his workshop became invalidated as the church set up a workshop of their own. Sometime after Lady Maria went missing after the event at Fishing Hamlet. Gehrman, in his grief, called upon a Great One to help him bring life to The Doll, and with its assistance via a contract created the Hunter’s Dream. The Doll, however, proved not enough to sate Gehrman’s longing of Maria’s return, and he soon became bitter of her presence. As the hunt dragged on and hundreds of hunters came and went, Gehrman realized he was bound to the dream and could never escape it. In his sleep he pleads to Master Willem and Laurence to free him from the dream.

This is innaccurate. He was not well known. The hunters and beasts were a well kept secret until the Oto hunters that began to recruit some civilians. They were originally trying to keep anyone from finding out the side effects of the old blood. Then became much more well known when Ludwig started hunting, because he pulled many civilians into it as a call to arms for the whole city.
Basically Gherman kept the beasts a complete secret. Also he and Maria originally went to massacre the fishing hamlet and pillage the body of Kos. Maria out of guilt, tried her best to make amends by trying to find some way to heal people and ascend with what they got from Kos but failed. She then cast Rakuyo into the well and committed suicide, being sucked into the nightmare before she was successful.
All these disagreements in the comments is exactly why I do not like from software games. First off, they usually don't have a story to tell. They have lore to uncover, but all you are doing is experiencing an event after it happened. Secondly, the lore is too fragmented and hidden in order to put together. If I need a team of experts to scour every inch of the game in order to get only half of the lore, then that's a failure in storytelling. Certainly not my type of game.

Interesting…. he took away all the aspects of Maria that gave her agency, like not only is she a doll in the dream, but she also doesnt have any other tooth or bite, and in the same essence, she would never actually choose to be with him. And it torments him knowing this. This game was for the ladies, I love it.

Gehrman didn't contact the moon prescence for the doll. That was just a bonus. The main reason was to make hunters immortal.

I suspected the Church establishing their own group of hunters is less to do with the outbreak of beasts but a means to have a group who would also protect and hide their secrets- kind of like the Swiss Guard and the CIA

That's really accurate. Except for the beginning part that's a bit off gherman and the hunters were first created to explore the deep labyrinthine catacombs beneath the city by burgenworth aka the chalice dungeons

The last part is way far from the truth… technically lawrence beckoned the Moon presence and she took gherman as hostage (like he was her surrogate baby she so desires, as every other great one), so the dream is shaped on ghermans wishes, thus he has the doll.

The OG Hunters/Workshop was founded by Byrgenwerth Scholars, once Laurence split with Willem and Byrgenwerth to found The Healing Church then the Church Hunters like Ludwig became more prevalent. Byrgenwerth believed hrough Insight mankind could ascend and become Great Ones, whereas The Healing Church believed it could be achieved through Blood Healing with the Blood of the Old Ones they discovered in the Chalice Dungeons, unfortunately the Blood Healing turned men into Beasts. Fear the Old Blood…
One thing I will say, just about everybody I've seen who does a Gehrman build gets the armor setup wrong. It may be Gehrman's set, but he doesn't wear it for the boss fight.
