if I remember well, beside the warmaiden and the drunken huntsman, Ysolda take over every other shop in whiterun, including the inn, if the owner die, I think she also can take over carlotta's stall
So I had one playthrough a while back where a dragon attacked Whiterun (as usual in skyrim) and I killed it fairly quickly. but then a few days later I saw Ysolda in Belethor's shop. I never saw Belethor's body and never knew he was A) killable and B) had a replacement ready in the game's code

So she's programed to take over the inn and the general store all we're missing is Arcadia's Cauldron and Ysolda will control all the main shops in that area

I accidentally had a follower that killed him cause I got caught stealing at his store in whiterun. Then I left the place for a while. So disappointed
I don't know how but one time I had a vampire attack Whiterun and when I turned around I saw Belethor dead.
Don't know if it was a bug or if he even can leave his shop when it is closed but he somehow died to a vampire.
