Today’s summer veggies curry is a simple yet vibrant dish featuring ground beef, onions, and tomatoes, paired with colorful summer vegetables like zucchini, eggplant, green bell pepper, and red bell pepper. The combination of fresh veggies and savory beef creates a delicious, seasonal meal full of summer flavors.
In my version, I kept it straightforward, using just a few ingredients to let the freshness of the vegetables and richness of the curry stand out. The result is a colorful and flavorful curry that’s easy to make, perfect for when you want something light, tasty, and satisfying.
My drawing is inspired by an anime named “Delicious in Dungeon,” also called “Dungeon Meshi.” It’s an anime about a daring group of adventurers who cook dungeon monsters to survive while rescuing their leader’s sister from a dragon!
