Did you know about “Hell Steaming” that can be experienced at the hot-spring inn, Toji Yanagiya, in Beppu, Oita Prefecture? A specialty of Kannawa onsen since the Edo period, this is a cooking method in which vegetables, eggs, meat, and fish are quickly steamed using the high-temperature vapour from hot springs. Containing abundant minerals from the hot spring, the steam draws out the full flavour of the ingredients – a flavour that is surprisingly condensed.
